Carvery and Hot Meat Presentation

Marmalade Glazed Leg of Ham - with a sweet and sour fig and cranberry relish

Prime Aged Sirloin of Beef - with a sweet green peppercorn sauce

Glazed saute of Duck breast with fresh cherries and thyme

Roasted Breast of Turkey - filled with a herb stuffing and a cranberry and orange conserve

 


Cold Presentation

Succulent cold cuts of roasted lamb - served with freshly made mint sauce

Honey and Sesame glazed chicken breast - with a tangy plum sauce

A selection of fresh, marinated and smoked seafoods

A variety of freshly prepared salads - with dressings and condiments

 


Vegetable Presentation

Dauphinoise Potatoes - a simple and delicious classic with grilled gruyere

Honey glazed kumara and pumpkin - with an apricot and ginger syrup

Cauliflower and broccoli florets - topped with Cafe de Paris butter

Market fresh steamed asparagus - with a lemon hollandaise

Baby carrots and snowpeas - in an orange and herb glaze

Green beans with citrus butter and toasted pinenuts

Traditional crispy roasted potatoes - with garlic and parsley oil

 


Desserts

McHugh's Christmas puddings - served piping hot with brandy sauce and cream

Croquenbouche - a tower of profiteroles filled with chantilly cream and garnished with strawberries

Classic Raspberry Trifle - Sponge, raspberries and custard layered with a hint of sherry finished with whipped cream and chocolate shavings

Chocolate and Caramel Roulade - chocolate sponge filled with panacotta and sweet caramel, rolled and covered with rich chocolate

Freshly picked summer strawberries and cream

Baked Alaska – icecream wrapped in a light sponge encased in italian meringue and baked.
